SOBA NOODLE SALAD with RADISH GREENS and GRILLED PRAWNS

Chinese and Japanese cultures have traditionally devoured long noodles on new year’s day because they are said to bring long standing good luck and opportunity.  Our version with Winter greens from the Appleseeds Teaching garden is certain to at the very least make you feel lucky.

Soba Noodle Salad with Winter Greens and Grilled Prawns

Serves:  6 to 8 | Prep:  30 Minutes

INGREDIENTS

1⁄2 cup sesame oil

1⁄4 cup mirin

2 tbsp. white miso

1 lb. peeled and deveined tail-on shrimp 

1 (8-oz.) package soba noodles

8 oz. radishes with the greens

4 green onions, chopped

Skewers

2 tbsp. Black and white sesame seeds

TECHNIQUE

  1. Whisk oil, mirin, and miso in a bowl. Toss shrimp with half, cover, and refrigerate at least 30 minutes; reserve remaining marinade to dress your salad.

  2. Bring a medium pot of water to a boil; cook noodles, approximately 5 to 7 minutes. Drain and run under cold water to cool. Toss with remaining marinade, radish greens, and green onions.

  3. Next, bring the grill to medium-high heat; skewer shrimp, then grill until pink.   Serve nestled with soba salad, sliced radishes, and toasted seeds.
