RED CURRY SMOKED SALMON DIP

The Holiday Season is upon us, which means long drives, massive family fights, and lots of booze and great food to help us drown our sorrows. This RED CURRY SMOKED SALMON DIP boosted with flavor from smoked salmon and BLUE ELEPHANT red curry paste is the perfect starter to any Holiday Party, regardless, if you’re celebrating miserably with immediate family, extended family, or just distant relatives.

SMOKED SALMON DIP

SERVES: 4 TO 6 | PREP TIME: 30 MINUTES

INGREDIENTS

1 cup crème fraîche

2/3 cup plain Greek-style yogurt

1 1/2 tablespoon BLUE ELEPHANT red curry paste

1 1/2 pounds smoked salmon, rough chop

Kosher salt and freshly ground black pepper

1 lemon

1 bunch basil, whole leaves

TECHNIQUE

In a medium sized bowl, whisk together crème fraîche, yogurt, and BLUE ELEPHANT red curry paste until well blended.

Place salmon in a food processor; pulse just a bit at a time until salmon is reduced to pea-sized pieces. Add salmon to crème fraîche mixture; fold to combine completely. Season to taste with salt, pepper, and fresh squeezed lemon juice.

Garnish dip with black pepper and whole basil leaves. Serve with thick sliced crusty bread or FIRE CRACKERS.

1) In a saucepan, add 1 pouch (10.6 oz.) of curry sauce and 1/2 cup of water. Bring to a boil.

2) Add whole shrimp (12 oz.) or any protein of your choice. (and more vegetables if you desire). Simmer until shrimp is cooked completely.

3) Serve with Blue Elephant Jasmine Rice. Enjoy.
