Grilled Bread with Herbed Ricotta

This is a great last minute appetizer idea, but is sure to be a favorite of your family because it’s so delicious. It doesn’t take long, and chances are you already have what you need in your fridge and pantry. Feel free to substitute whatever herbs you have on hand, but this combination is pretty damned good.

Grilled Bread with Herbed Ricotta

Serves: 4 to 6 | Prep: 10 Minutes | Cook: 10 Minutes

Ingredients

  • 1 pound fresh ricotta


  • 1 teaspoon finely grated lemon zest plus 3 tablespoons fresh lemon juice


  • 3 garlic cloves, smashed and minced

  • 3/4 cup extra-virgin olive oil

  • 1 cup chopped mixed rosemary, parsley, mint 
and thyme

  • 2 tablespoons butter

  • Salt and pepper, ro taste

  • 1 baguette, sliced

Technique   

In a mixing bowl, mix ricotta, lemon zest, lemon juice, 2 garlic gloves garlic and 1/4 cup 
of olive oil until combind. Add half cup of the herbs herbs and season with salt and pepper. Transfer to serving bowl or ramekin.

Prepare grill to medium high heat. Meanwhile, combine 1/4 cup olive oil with butter in small pan, heat over medium low heat with garlic; brush both sides of sliced bread with butter, olive oil mixture. Place bread on medium high grill, grill on both sides until slightly charred, approximately 4 to 5 minutes.

Finally, drizzle herbed ricotta with remaining olive oil, top with herbs and pepper; and serve with the bread.
